It’s not the fat, it’s the carbs!For so long we've been told that our consumption of dietary fat is the reason for the high rates of obesity and other health problems-despite the decline in our consumption of fat, especially saturated fat. This is because past studies failed to control for carbohydrate consumption. Researchers are now showing that it is carbohydrate intake, not the consumption of saturated fat, that is the variable in determining the incidence of health issues.
